Please help. NAS problem (Fantom MegaDisk)

I have the Fantom Drives Megadisk NAS (description) and have had problems every step of the way (starting with the mysterious case of dissapearing/reappearing music library to premissions randomly being reset, ect. ect)

Last night I tried to access it and there was nothing there. 750 gigs of tv shows, home movies and music videos had just disappeared. According to the web interface the disks are healthy, just empty. Judging by my past experience with Fantom support I am not optomistic that they will be able to give me a solution beyond power cycle and pray / send it in so we can tell you it is F'ed and mail you a blank unit.

I have an extra dual 3.5" USB enclosure (NexStar MX), my question is if I take apart the Megadisk and put the disks in the other enclosure is it possible that I will be able to read them correctly (they are set up as a RAID0 array currently) or salvage to data using disk recovery tools?

I am at my wits end with this thing and just want my data back. I have most of it archived on DVD but would like to avoid endless hours of recopying to a new drive.
