Can anyone recommend a DVD ripper that work with MCE -- i.e stores in most efficient format for MCE?  I would like to rip some popular kids DVD's and keep them on the MCE box for easier/faster retrieval and playback.

Try DVD Shrink.  It will allow you to strip out the extras, including subtitles, foreign languages, trailers, previews, and unecessary audio streams.  Do a search for it, and remember its no cost except for a donation if satisfied.
